APPEARANCE: Ivory, with green-blue veins of mold throughout the interior. The rind is ivory, with some grey splotching.
TEXTURE: Rich, buttery, and smooth.
TASTE: Currant, blackberry, blueberry, and brown butter, with moderate “blue” flavor.

- Bluehorn Blue pairs excellently with a variety of wines, including Viognier and Riesling. We also enjoy it with dessert wine, especially Sauternes. With flavors of caramel, vanilla, and cream, wheat ales and porters will complement this cheese as well.
