Mount Mazama Cheddar



In honor of Goat Cheese Month, we’ve added this delicious, complex staff favorite to our website-only for the month of August!

Mount Mazama is the epitome of umami. Made with a combination of cow and goats milks this cheddar showcases the best of both worlds: a thick texture, the flavor of sweet cream with a touch of tanginess from the cows, and caramel and nutty notes with a hint of acidity from the goats. The discovery of small crystals throughout the slightly crumbly paste will provide yet another level of textural variation and pleasure for the palette

This cheese also pairs well a sparkling white like a Cremant du Jura or a Southern Oregon Merlot that can balance the thick texture and richness


Appearance: pale yellow-white with definition of curd throughout

Texture: Moderately firm and crumbly when sliced. The discovery of crystals adds another surprising texture. 

Taste: Sweet, tangy, nutty and complex with a touch of acidity from the goat’s milk


  • Mount Mazama will stand out on a cheese board with a range of accompaniments from chutneys to roasted nuts. Try it paired with Bow Hill Blueberry Confiture
  • We most enjoy this cheese alongside a sparkling white like a Cremant du Jura or a Southern Oregon Merlot.

  • Mixed milk, 80% cow milk-20% goat milk

Shelf Life: 9 months 

Suggested Storage: Keep refrigerated at 38°-40° F
