Jefferson 2 Year Aged Cheddar



Our classic Northwest-style cheddar is nutty and sweet, with a subtle tangy finish. As cheddar ages, it develops the distinctive “sharp” flavors and grainy texture. This cheddar has been aged on average 2 years, producing a pronounced sharpness that’s balanced by the cheese’s creamy, melt-in-your-mouth texture. A winner at the 2022 Good Food Awards!

Appearance: Pale buttery yellow-white

Texture: Moderately firm and sliceable; aged versions exhibit a more crumbly and crystalline texture

Taste: Nutty and sweet, with slight sharpness that increases with age

Suggested Pairings:

  • Delicious grated into a casserole or sliced on a sandwich. This cheese also shines on a cheese plate alongside dried cherries, pecans, walnuts, and cured sausage.
  • A versatile cheese, it pairs nicely with a glass of bright Sauvignon Blanc or Pinot Gris, or alongside a variety of different ales.
